Poor Dad

I talked to my Mom last night after she got home from staying with Dad at the hospital. She said that Dad was awake and doing ok. He was a little grumpy, no more cigarettes or soda for him. That would make me grumpy too. I did stop drinking soda ( Coke / Pepsi ) just over a week ago because of a toothache. I have been drinking soda daily for as long as I can remember. The first couple days were hard but after that I didn't even want it anymore. Now I just drink my morning Coffee and water the rest of the day. I will have to give some serious thought to giving up smoking. Still worried about my Dad and wish I could be there for him and my Mom.

Vickis Quiche


My Wifes Quiche

2 Deep dish Pie Crusts
9 eggs
just tiches of Milk
Full jar of Hormel Bacon Bits
One Box Frozen Spinach
One half onion chopped fairly fine
16oz of Shredded Mozerrella Cheese
Few shakes of salt, pepper & garlic salt

Use a fork to poke holes in the bottom & sides of pie crust after defrosting them. (quite a few pokes)
Brown Pie Crusts in oven at 400 degrees until light golden brown.
Turn on broiler and brown interior of pie crust lightly as to not burn the top of pie crust.

Start with eggs & milk... whip them well till it gets big air bubbles.
Add rest of ingrediants. Have pie crusts ready to go before pouring mixture into them.

Put pies in oven at 400 degrees for 5 minute or so.
Turn oven down to 325 degrees & bake about 50 minutes or until spongy firm and kinda bounces back atcha
when pressed on with hand.

Then turn on broiler and brown the top... turning pretty constantly until nicely browned (golden brown)
Remove from oven & chow down.

Dad had 90% blockage in the left LAD

I just talked to My Mom. My Dad had 90% blockage in the left LAD "Left Anterior Descending coronary artery". They did angioplasty and a stent. He has to stay overnight in the hospital and should be home tomorrow afternoon. That was really a close one. A heart attack caused by this is called The Widowmaker. Widowmaker is the nickname given to a heart attack caused by a blood clot in the left anterior descending artery. It is caused by plaque build up in the artery, and may have virtually no symptoms until the victim falls dead suddenly and unexpectedly. Thank God he found out soon enough. Wish I could see him.

It's been two years since my Dad had angioplasty and a stent for his blockage and he is doing fine. He plays golf every day and works part time.

Thinking about My Dad

I am sitting here at home today wondering how my Dad is doing. For those of you that don't know he is having a Cardiac Cath today. It's hard being 1100 miles away at a time like this. My parents live in Florida, so I just sit here in Kansas waiting to hear from them to let me know that everything is ok. It's interesting how this came about, the Cardiac Cath. My dad went in for a Colonoscopy about two weeks ago and had an abnormal EKG. They ( The Dr's ) sent him to see a cardiologist and as a result we arrive at today. My father is in his early 60s and has always seemed so healthy. He plays golf every day and is a very active person and seems to be in good shape. I guess you just never know. Hope I hear from them soon.

My Chili

This is my first post to this blog and I thought I would post a recipe for my daughter Cindy. Let me know how it turns out for you.

Dads Hardy Chunky Chili

2 lbs ground venison or lean ground beef
1-2 packages of dry chili seasoning ( your choice )
1 large white onion chopped
4 large cans diced tomatoes, 28oz each with juice
2 large cans spicy chili beans with juice. I prefer Bush's chili beans but any will do.
1-2 cans Rotel tomatoes with chill peppers ( your choice )

Using Large pot
1) Cook ground venison/beef with chopped onion until no longer pink / Drain / Return to pot
2) Add the chili seasoning and stir into the meat/onion
3) Add diced tomatoes and stir
4) Add Rotel tomatoes and stir
5) Add chili beans with the juice from the cans and stir

Cook for several hours on low heat letting it simmer.

Serve alone or with shredded sharp cheese and a dollop of sour cream.

Can also be served over cooked white rice.

Leftovers freeze well.

Note: The more chili seasoning and Rotel tomatoes you add the spicier it is.
